Job Description

Schmidt's Restaurant und Sausage Haus in German Village are seeking a Kitchen Manager to join the team. If you are excellence driven, organized, a team player and have experience running a high volume fast paced kitchen Schmidt's is the place for you. Schmidt's has been serving iconic food and hospitality for over 100 years.

Responsibilities include:

  • Supervising, overseeing, producing and preparing of food consistent with established recipes and procedures
  • In conjunction with management team enforce compliance with all policies and procedures for food safety, cleanliness and health standards
  • Conducting formal line taste & temp checks
  • Manage performance of back of house staff including performance reviews, coaching, discipline, staff development, recruiting, hiring, training and mentoring
  • Understanding and managing food costs, waste tracking, controlling labor and food costs through setting hours and weekly schedules, assigning tasks (before, during and after open hours of the restaurant) setting pars and production schedules, inventory management and food ordering
  • Maintaining kitchen equipment
  • Maintains health department and 3rd party auditor service standards at all times
  • Ensures the kitchen staff supports and assists the FOH staff by providing them with all products needed to execute an excellent guest experience in a timely manner

Qualifications:

  • High school diploma or high school equivalency 
  • Minimum one year relevant management experience
  • Experience supervising and managing staff
  • Knowledge of safe food handling
  • Excellent communication skills, verbal and written
  • Understanding of P&L accountability
  • Knowledge of budgeting, forecasting, staffing and scheduling
  • Computer and Microsoft office skills
  • Servsafe certified

Physical Requirements:

  • Ability to stand during an entire shift
  • Ability to reach, bend, squat, stoop, shake, pour, carry, push and lift
  • Ability to lift tubs, trays and cases up to 75 pounds multiple times per shift
  • Frequent exposure to steam, high temperatures, humidity, and extreme cold
